Professional Bakery Tips When Choosing the Best Wedding Cake Flavors
Offer options. Most guests love having a variety of wedding cake flavor options to choose from. One popular cake option is to have a traditional tiered vanilla wedding cake and then offer a variety of other flavors on the side.
Keep it all white. You can also make each tier a different flavor and keep the look cohesive with vanilla (white) icing all around the outside of the cakes.
Reveal the inside on the outside. I also love to highlight the flavors on the inside with decorations on the outside. For example, you can serve a tri-colored Neapolitan cake with strawberry, vanilla, and chocolate tiers and matching frostings.
Save the best for yourself. If you’re keeping the top tier to freeze for tradition, pick your favorite flavor for this one! This is also a great option if you want something really off-the-wall or unique.
Keep it the same. If your cake has minimal icing (like a semi-iced or naked cake), it’s usually best to have the same flavor throughout so all the cake tiers look consistent in color.
Decorate with the season. Some flavors can be served all year long, but serving a seasonal cake (or using seasonal garnishes) can really set the theme. For summer weddings, use lots of berries and fresh fruits. For fall and winter weddings, think red velvet or cinnamon spice cakes like my carrot cake or snickerdoodle cake.
Set up a cake bar. Love cakes and want to offer a variety of options for your guests? Set up a dessert bar with several small, flavor-themed cakes! Guests love admiring the cake table and deciding which flavor to try. When I got married, I made 13 different flavors for our cakes, and our guests still talk about it!
Wedding Day Logistics
Consider temperature. Butter melts between 80-100F. For warm-weather weddings, make sure you consider how to keep the cake below that temperature to avoid a melty mess. Another option is to use a stabilized frosting made with shortening and Instant Clearjel, like my go-to vanilla buttercream.
Plan wisely for serving. When selecting flavors for a large, tiered wedding cake, consider who’ll be cutting it. If it’s a friend or family member, you might want to stick to just two flavors and alternate them on each tier. This makes it easier to serve and provides an equal distribution of flavors. If, for example, you only have chocolate on the bottom tier, it could mean a longer wait for guests eager for chocolate.
