{"id":1197,"date":"2024-06-14T08:00:13","date_gmt":"2024-06-14T07:00:13","guid":{"rendered":"https:\/\/sanabaking.snipsglow.com\/?p=1197"},"modified":"2024-06-14T08:00:13","modified_gmt":"2024-06-14T07:00:13","slug":"lemon-ricotta-pancakes-with-blueberries-the-little-french-bakery","status":"publish","type":"post","link":"https:\/\/sanabaking.snipsglow.com\/?p=1197","title":{"rendered":"Lemon Ricotta Pancakes with Blueberries \u2014 The Little French Bakery"},"content":{"rendered":"<p><img decoding=\"async\" src=\"https:\/\/sanabaking.snipsglow.com\/wp-content\/uploads\/2024\/06\/Lemon-Ricotta-Pancakes-with-Blueberries-\u2014-The-Little-French-Bakery.jpg\" \/><br \/>\n  I&#8217;ve adapted the pancake recipe from Bobby Flay&#8217;s.To print this recipe click HERELemon Ricotta Pancakes with Blueberries and Lemon CurdMakes about 8 &#8211; 4 inch pancakesIngredients3\/4 cup all-purpose flour1 tablespoon baking powder1\/2 teaspoon ground nutmeg1\/4 teaspoon salt2 tablespoons sugar1 cup ricotta cheese2 eggs2\/3 cup buttermilk or milk, you may need more to thin the batter as desired1 lemon, zested and juiced Butter or vegetable oil, for griddlelemon curd (make your own, or use store-bought)blueberries &#8211; fresh or frozen (about 1 pint) tossed with 1-2 TBSP granulated sugarmaple syrup and\/or confectioners&#8217; sugar (optional for serving)DirectionsPreheat a nonstick griddle or frying pan over medium heat. \u00a0When a few drops of water sizzle on the griddle, you&#8217;re ready to make pancakes.In a bowl, whisk together flour, baking powder, nutmeg, salt, and sugar in a small bowl. In a second bowl, whisk together the cheese, eggs, milk, lemon juice and lemon zest, just to combine. Whisk\/fold the flour mixture into the wet ingredients until just combined. Brush the hot griddle with butter or oil, I prefer oil. \u00a0For each pancake, pour approximately 1\/4 cup measure of the batter on the griddle. \u00a0Flip when bubbles appear in the center of the pancake. \u00a0Cook on both sides until golden brown.
