{"id":1592,"date":"2024-06-16T23:28:11","date_gmt":"2024-06-16T22:28:11","guid":{"rendered":"https:\/\/sanabaking.snipsglow.com\/?p=1592"},"modified":"2024-06-16T23:28:11","modified_gmt":"2024-06-16T22:28:11","slug":"judys-gross-eats-detroit-style-pizza","status":"publish","type":"post","link":"https:\/\/sanabaking.snipsglow.com\/?p=1592","title":{"rendered":"Judy&#8217;s Gross Eats: Detroit-style Pizza"},"content":{"rendered":"<p>\n\u00a0It\u2019s time for another bread challenge from the Bread Baking Babes.\u00a0 This time, Karen, of Karen\u2019s Kitchen Stories,<br \/>\nasked the Babes to make a Detroit-style pizza.\u00a0<br \/>\nThis is a small-batch pizza that serves one very hungry person or two,<br \/>\nif you must share.<\/p>\n<p>I used the same-day dough approach and topped it with Muenster and<br \/>\nMozzarella cheeses, Cajun-style Andouille sausage, and homemade pizza<br \/>\nsauce.\u00a0 I did not add the jalapenos because<br \/>\nthe sausage was definitely hot enough!\u00a0 A<br \/>\nsearch for the traditional brick cheese turned up empty, although one local<br \/>\ncheese shop had actually heard of it.\u00a0<br \/>\nEven Whole Foods failed me!\u00a0<\/p>\n<p>This is a simple and relatively quick pizza to put together.\u00a0 I had never drizzled hot honey on a pizza, so<br \/>\nI did give it a try.\u00a0 It was a nice bite,<br \/>\nbalancing the heat from the sausage.\u00a0 I<br \/>\ncan see more of this pizza in my future, using a variety of toppings.\u00a0<\/p>\n<p>To quote Modernist Cuisine:\u00a0 \u201cYou<br \/>\ncan\u2019t talk about Detroit-style pizza without talking about cheese. The crust<br \/>\nhas the light, airy crumb and crispy bottom characteristic of all the<br \/>\nbread-like pizza crusts. What differentiates a Detroit-style pizza is that the<br \/>\nedge of the dough is bordered with cheese, applied so that it comes right up<br \/>\nagainst the sides of the baking pan. In the oven, the cheese melts and bakes<br \/>\ninto a golden-brown, crunchy crust. The best pieces to get are the corners<br \/>\nsince they have two crispy sides to them, but the center ones are still plenty<br \/>\ndelicious.<\/p>\n<p>And not any cheese will do. For a<br \/>\ntraditional Detroit-style experience, it has to be Wisconsin brick cheese mixed<br \/>\nin equal parts with pizza cheese or cheddar cheese. Wisconsin brick cheese has<br \/>\na rich flavor best described as being like melted butter.
