This sandwich bread recipe for the Zojirushi home made setting includes the steps for that program. You can read more about affiliate programs here.<\/p>\n<p>Note that this sandwich bread recipe was most recently tested with a Zojirushi BB-PAC20.\u00a0 (Learn more about what bread machines I own and recommend.)\u00a0 I\u2019ve made this bread at sea level and at an elevation of 3,700 feet.\u00a0 It worked out fine at both locations.\u00a0 If you live at a higher elevation check out my tips for making bread at higher altitudes.\u00a0<br \/>\nFeatured Comment:<br \/>\nThis sandwich bread was absolutely wonderful. Thank you so much for posting it. ~ Theresa\u00a0<\/p>\n<p>My current machine is my fourth Zojirushi.\u00a0 These machines last a long time and make great bread.\u00a0<br \/>\nOne of my first Zojirushi bread machines had a great sandwich bread recipe that used the machine\u2019s sandwich bread setting.\u00a0 Sandwich bread was a favorite of the Man of the House (TMOTH) as it really was great for sandwiches.<br \/>\nLater Zo models didn\u2019t have the built-in sandwich bread setting.\u00a0\u00a0However, Zojirushi machines have a \u201chome made\u201d setting.\u00a0 All I needed was the bread program for sandwich bread and I would be in business!<br \/>\nUsing the Home Made Setting<br \/>\nWhat is the home made setting?<br \/>\nTo make bread the machine has to go through a series of steps.\u00a0 It warms up, it kneads, it allows the bread to rise, it beats the dough down and then has it rise again.\u00a0 It beats the dough down again and there\u2019s one more rise. Finally, the machine bakes the bread.\u00a0<br \/>\nThe home made setting allows you to alter the timing of any of those steps.\u00a0 You do it by entering a \u201cprogram\u201d that takes the bread machine through its steps.\u00a0 The program tells the machine what to do for each of its cycles.<br \/>\nSandwich Bread Program<br \/>\nI wanted to make TMOTH his favorite sandwich bread.\u00a0 So I emailed Zojirushi and asked them for the details of the old sandwich bread setting.\u00a0 \u00a0With that information, I was able to make a sandwich bread program.\u00a0<br \/>\nI entered the program into the home made setting.\u00a0 That\u2019s how I was able to recreate the old sandwich bread setting.<br \/>\nHere\u2019s the program for sandwich bread.\u00a0 Note that the bread will automatically be punched down before rise two and rise three.\u00a0\u00a0<br \/>\nPreheat: 20 minKneading: 15 \u2013 18 min. (I used 17 minutes)Shape: Off (Not all machines have a shape cycle)Rise: 1: 45 min.Rise: 2: 20 min.Rise: 3: 45 min.Bake: 50 min.<br \/>\nHome Made Function<\/p>\n<p>The Zojirushi manual says that you can make meatloaf in a bread machine using the home made function. I tried it and I don\u2019t recommend it. The problem was NOT the home made function itself. Learn about the critical problem with this process.<\/p>\n<p>What if You Don\u2019t Have a Programmable Machine?<br \/>\nIf you don\u2019t have a programmable bread machine, then I\u2019d use the basic setting with medium crust.\u00a0 I haven\u2019t tried this yet, but it\u2019s on my (long) list of bread experiments to try.\u00a0 If you do use this recipe with the basic setting, I\u2019d love to hear how it turned out!<br \/>\nMaking Sandwich Bread Recipe for the Zojirushi Home Made Setting<br \/>\nThis recipe makes a two-pound loaf of bread using the home made setting with the above program. Use the medium crust setting.<br \/>\nFollow the instructions that came with your bread machine in terms of which order to add ingredients to your bread machine. I use a\u00a0Zojirushi bread machine, so I add the liquids first.<br \/>\nHere\u2019s how it looked after I added the ingredients.<\/p>\n<p>As always, check the dough after five or ten minutes of kneading. Open the lid of the\u00a0 bread machine and see how the dough is doing. It should be a smooth, round ball.\u00a0\u00a0<br \/>\nIf the dough is too dry add liquid a teaspoon at a time until it looks right.
