I am sharing a quick and easy recipe for these cookies with the option of sandwiching with jam of your choice. <\/p>\n<p>This is such a nostalgic childhood recipe. Every kid growing up in 80s and 90s had these sandwich cookies in one form or the other.<\/p>\n<p>Recipe at a Glance<\/p>\n<p>Butter\u00a0\u2013 unsalted, softened<\/p>\n<p>Sugar\u2013 grinded\u00a0\u00a0<\/p>\n<p>Egg\u00a0\u2013 large, room temperature<\/p>\n<p>Vanilla\u2013 essence or pods\u00a0\u00a0<\/p>\n<p>Flour- all-purpose\u00a0<\/p>\n<p>Jam\u2013 any flavor of choice (optional)<\/p>\n<p>Step by Step Process<\/p>\n<p>Cream butter, add sugar and beat well. <\/p>\n<p>Add egg and vanilla, beat, add flour and mix until combined. <\/p>\n<p>Roll out the dough and cut cookies.<\/p>\n<p>Spread jam on one cookie and sandwich with another one.<\/p>\n<p>FAQs<\/p>\n<p>Can I make vanilla cookies without eggs?Yes, there are many eggless recipes available for vanilla cookies, catering to individuals with dietary preferences or restrictions.You can try out my Eggless Marble Cookie recipe if you are looking for eggless cookies.<\/p>\n<p>Can I freeze vanilla cookies?I do not recommend freezing vanilla cookies as they become a lil soggy once defrosted due to condensation. I would rather freeze unbaked cookies and bake them straightaway in the hot oven.<\/p>\n<p>Serving Suggestions<\/p>\n<p>These cookies taste delicious on its own or when sandwiched with jam of your choice. <\/p>\n<p>These are perfect homemade snacks for kids, lunch boxes or simply with any tea or coffee for that little dessert.<\/p>\n<p>You can also try out the homemade strawberry jam on the blog to use with this recipe.<\/p>\n<p>Substitutions &amp; Variations<\/p>\n<p>You can substitute apricot jam with any jam of your choice. <\/p>\n<p>You can also use ganache or caramel to sandwich them.<\/p>\n<p>Alternatively, you can dip half the cookie in melted chocolate and sprinkle with crushed nuts  for variation.  <\/p>\n<p>Storage and Make Ahead<\/p>\n<p>You can store these cookies in an airtight container at room temperature for up to a week. <\/p>\n<p>To store for an extended period, you can freeze cookies after cooling them completely (and before sandwiching with jam) in an airtight container or resealable freezer bag. Add egg and vanilla, beat well.   Add in flour and mix until combined.   Take out the dough on parchment\/ wax paper and cover with another one.   Roll out around 1\/8 inch thick evenly.   Refrigerate until firm.   Pre heat oven to 350 F.   Cut out cookies with shape of your choice using cookie cutter.*   Refrigerate if softened, to avoid spreading.   Bake for 15-18 minutes, rotating half way through.
